Volcán Galeras.
Villa Inez is a small rural community in Consacá, Nariño, on the slopes of Volcán Galeras. Farms in the region are generally small and located on steep Andean hillsides; production is largely manual, with cherries selected by hand at full ripeness.
Selected cherries undergo an extended 36-hour fermentation, followed by a full washing and 12 days of drying in parabolic dryers — a deliberate process that preserves the clarity and brightness of the Nariño terroir.
