La Esmeralda.
La Esmeralda is situated in Monte Bonito, Pitalito, Huila. Warm days, cool nights, and high altitude create the slow cherry ripening that defines this growing environment. Alexander Hernández has produced coffee at this farm since 2007; every hectare of the 40-hectare farm is dedicated to coffee production.
Fully ripe cherries are selected by hand. Whole cherries ferment for 24 hours, followed by 48 hours of dry anaerobic fermentation. The coffee is then pulped while retaining a portion of mucilage and dried for approximately two weeks in parabolic solar dryers.
